    We have this every Thanksgiving (and all the time because we love it!) but add 8 oz of sour cream and a can of regular corn, it is moist and delicious! Becomes more of a side dish casserole instead of bread. My fave!

    My mom makes a version of this for Thanksgiving and Christmas. We call it corn casserole.

    1 can cream corn
    1 can reg. corn
    1 box Jiffy cornbread mix
    1 stick butter
    1 C. sour cream
    Cheddar cheese for the top.

    Sooooo good!

        I have made this recipe plenty of times but mine calls for 2 eggs, no water. I also do not add the greasy cheese.

    Posted 2x earlier but we make this corn cassarole lots (the one with the sour cream and extra corn) – it always gets raves! And soo cost effective for pot-luck dinners!

    I make something very similar but throw in an egg and some sour cream. I sometimes throw in a bit of sugar too! A few times I've not made it because I was out of sour cream, so it's good to know that it still works wihtout it.

    Oh how I love thee, corn bread. I love thee so much I pretend you do not have any butter in at all. I lobe thee so much that I cannot bear to leave you sitting on my counter overnight all by your lonesome and so gobble you up in the dead of night, alone, out of mercy and concern.

    It's true.

    Try a can of mexicorn and use two tablesoons of the corn liquid for a MILDLY spicy version. Very good.

    But I prefer sweet.

    Oooooooooh how I prefer sweet.

    And so much for a hot bath while I visit the BCD. No more hot water. Shucks.

    I made this just last night……a Paula Deen version! I use her recipe and add 1 cup of sour cream to it! I LOVE THIS!!!!! Post it up at Tasty Kitchen with the Pioneer Woman!!!! Check it out! I have all my recipes cataloged on her recipe site and then my readers can just go there to easily print out the recipe! So easy and a great tool!

    I cannot believe the price of food in the U.S a packet of muffin mix in Aust is at least $3.95, i am going to try this recipe anyway, despite the price difference, sounds yummy!!

    I’ve been making this recipe for years (with a little less butter) and my husband and kids love it. I’ve also added diced green chiles and grated cheddar cheese to jazz it up a little. The next time I make it, I’m putting the whole stick of butter :)

    I made this with a full stick of butter before I realized the half stick was pictured. It turned out great! Also, I used a glass loaf pan, as suggested. I cut the butter into small pieces and put it directly in the pan and used the microwave to melt it. I stirred in the creamed corn, then the dry Jiffy mix and baked. No bowl to clean up!

    Made this tonite turned out great. Hubby has never had this. I made sour cream chicken enchiladas and and a scoop or two if yummy corn cake. Delish! I loved this from El Torito so glad I can make it at home:)

    THIS WAS AWESOME!! I used to buy the Chili’s restaurant mix but it costs 4X as much and a lot of the time the store doesn’t have it when we want it. This taste even BETTER than theirs! Thank you so very much for posting the recipe!!

    Daughter and I fell in love with this simple to make recipe. We like our food with a little kick, so I added a little chipotle seasoning and about 1 tablespoon of Tabasco sauce and BAM! It was awesome.

    Love this dish! This is my go-to dish whenever there is a potluck and it’s a big hit everytime! The last couple times I made it I added a small can of diced green chilis. So good! But this recipe is amazing and sooo simple as is. :)

    I made this last night for dinner with my husband’s kickin’ chili. The recipe was delicious! I used a whole stick of butter and it did have to cook about five minutes extra (30 minutes instead of the listed 25 minutes though). Great recipe!

    WHY DOESN’T T ANYONE ANSWER THE QUESTION ABOUT THE BUTTER? SHOWS 1/2 STICK BUT STATES A STICK…WHICH IS IT? Is it better with the sour cream…different how?

      You would use a full stick. On the West Coast their butter sticks look like a half stick, but they are in fact a whole stick. Hope this helps!

    I’ve been using a whole stick of butter, although it does look like a half stick in the picture. I just have to give it an extra 10 mins to bake but it’s so moist, I never wanted to try it with less butter! I think I’m going to try with 2tbs of sugar tonight ….

    It is a full stick.

    The picture shows what I call a “California” butter stick.

    They are shorter and taller than what you see in the rest of the country – but it comes out exactly the same size.

    What’s shown is a cube of butter which is equivalent to a stick of butter.

    My husband doesn’t normally care for my cornbread but the rest of his family eats it till there’s no more. This recipe was a game changer. He absolutely loved it. Of course I did too. Thanks for sharing!
